Chicken-Vegetable Chowder

I got this recipe from one of Betty Crocker's cookbooks: Soups Stews & Chilies,  and I made the worst chicken soup I ever made in my life.  I served this soup to my friends and I was embarrassed by it. I never tasted it before I served and that was my mistake. I had made chicken soups many times before and they were all good, as if nothing could really go wrong when chicken was thrown in a pot with carrots, onions and whatever vegetables.  But not this recipe.

I am suspecting the combination of the "condensed cream of chicken" and a "low sodium chicken broth" ruined the soup.  My friends had their first spoonfuls and their facial expression and slow eating movements told me something was wrong with this soup. Then I tasted it myself and it was awful!  I told everybody that the soup tasted and smelled bad and they should all stop eating.  Everybody was so relieved when I made the announcement. I trashed the entire 4 quart pot of soup that wasted my chicken and vegetables, let alone the 7 hours of electricity that my slow cooker consumed to make this horrible and toxic tasting soup.  I still don't know what went wrong.  This was my first time using the condense cream of chicken can soup to make anything.

Avoid this recipe in case you have the cook book or you saw it on the Betty Crocker's website.

Skinny Jambalaya

This slim down Jambalaya has only 349 Calories per serving. We love the smoky flavor of the turkey. This Jambalaya is great for weight control and yet it doesn't compromise in flavor. It's easy and relatively quick to prepare. We however had not such an easy time finding "smoked turkey drumstick" in our nearby grocery store. It's worth the trouble finding it though, the turkey really gives this Jambalaya a great taste. Click here for the recipe.

Roasted Chicken with Caramelized Onions Soup

We found this recipe advertised on our Food and Wine Magazine 2009 January Issue. Out of this magazine, this is the first recipe we ever tried and it is on an ad. We decided to make this soup tonight because it looked easy and simple enough to make. We also happened to have all the ingredients already since they are very common staples. This is such a filling and delicious soup and we are so happy that we tried it tonight. The caramelized onions give the soup a very nice smoky and sweet flavor. They make an otherwise ordinary chicken soup a lot more special. This is one of the very best chicken soups we ever had in our lives and we can't believe how such a delicious soup with such complexed and great flavor actually took so little time to make.
